4 Common Scone Faults


Tough/heavy   – Butter was not cold enough
                 - over mixed
-                    -the butter was melted

Did not rise     - over handled
                   - over knead
                  - didn’t sift flour
-       didn’t cut in to the milk, butter and flour

Cooked on the outside and raw on the inside
-     - place the scones too close together when baking
-     - oven temperature too low

Baking powder flavour 

- too much baking powder
-  too much self raising flour and baking powder
